Recipe: Chocolate chip mini muffins
We're on a little mini muffin kick at my house since I made mini corn muffins in the fall. The latest creation - mini chocolate chip muffins - were gone in less than 24 hours.

We're on a little mini muffin kick at my house since I made mini corn muffins in the fall. The latest creation - chocolate chip mini muffins - were gone in less than 24 hours.
For this recipe, I searched online and considered my usual go-to muffin recipe from food writer Mark Bittman, who includes it in his cookbook "How to Cook Everything," (which I highly recommend, along with the very useful app that I have on my iPhone).
Here's what I came up with:
Mini chocolate chip muffins
Makes about 20 mini muffins
1 cup flour
1/4 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg
2 tablespoons corn or canola oil
1 1/2 teaspoon vanilla
1/2 cup milk
3/4 cup chocolate chips
Preheat the oven to 375 degrees. Mix the dry ingredients together in one bowl. In another, combine the wet ingredients and whisk. Add the wet mixture to the dry ingredients and mix together. Grease your mini muffin pan and spoon the batter into the pan. Bake for 10 to 12 minutes until done.
