Christmas Cookie Recipes: Almond Joy Bark

Most of my extended family prefers not to receive gifts. And, if we do give anything, it's always homemade. So, though I could easily buy a box of chocolate candy to give to loved ones, it's nearly as easy to make our own at home.

This recipe can be switched up any number of ways with different ingredients. Maybe white chocolate and dried cranberries and nuts. Or milk chocolate, peanuts and raisins. I recently made it with bittersweet chocolate, almonds and sweetened shredded coconut.

Here's how you can get it done.

Almond Joy Bark

12 ounces of bittersweet or semi-sweet chocolate
1/2 cup almonds, chopped

1 cup sweetened shredded coconut

Get out a baking sheet and line it with some parchment paper. Chop up the almonds. Melt the chocolate according to the package's instructions. I usually stick it in the microwave. Spread the melted chocolate on the parchment paper. Evenly sprinkle the almonds and coconut across the melted chocolate. Stick it in the refrigerator for an hour until it's hardened. Break it up into pieces.
