Oatmeal White Chocolate Cranberry Cookies

Adapted from CraisinsRecipes.com
2/3 cup butter, softened
2/3 cup brown sugar, packed
2 large eggs
1 1/2 cups old-fashioned rolled oats
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cup dried cranberries

1 cup white chocolate chips

Preheat oven to 375 degrees.

Beat together the softened butter and brown sugar until fluffy. Add in the eggs and combine.

In another bowl, combine the oats, flour, baking soda and salt. Add the dry ingredients to the butter and sugar and mix.

Stir in the cranberries and white chocolate chips. Drop teaspoonfuls of batter onto ungreased cookie sheets. Bake for about 10 to 12 minutes. Let cool on a wire rack.

This makes about two dozen cookies.
