Recipe: Turkey and veggie walking tacos

This simple and easy turkey and veggie "walking tacos" recipe makes for a filling meal and, with leftovers, a yummy lunch box addition. Just keep the meat warm in a thermos and include a bag of chips and some toppings.

Turkey and Veggie Walking Tacos

1½ teaspoons vegetable oil
1 medium carrot, peeled and shredded
1 medium zucchini, shredded
1 pound ground turkey
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
Salt and pepper to taste

8 1-ounce bags of corn chips

Suggested Toppings:

  • Diced tomatoes
  • Sliced avocados
  • Shredded lettuce
  • Shredded cheese
  • Plain Greek yogurt
  • Cilantro

In a skillet over medium-high heat, add the vegetable oil, carrot and zucchini. Sauté until the vegetables start to soften.

Add the turkey to the pan and cook until the meat is no longer pink and has reached an internal temperature of 165 F.

Add the cumin, chili powder, garlic powder, salt and pepper to the meat and vegetable mixture. Cook until the cumin and chili powder are fragrant, about 1 minute, then remove the mixture from the heat.

Open a bag of corn chips. Crunch the bag a little to break up the chips.

Spoon 2 ounces of the meat and vegetable mixture over the corn chips, add your favorite toppings and enjoy—right out of the bag!
