Recipe: Parmesan garlic roasted potatoes

Heads up: These are kind of addictive and they make your kitchen smell so good. What's even better, they're super easy to make and taste yummy the next day.

Heads up: These are kind of addictive and they make your kitchen smell so good. What's even better, they're super easy to make and taste yummy the next day. I like to eat them cold on top of salad with the crispy bits of Parmesan cheese.

Parmesan Garlic Roasted Potatoes

Parmesan Garlic Roasted Potatoes

2 pounds potatoes, cut into one-inch pieces. I use whatever I have on hand which, this week, was red and Yukon gold potatoes

2 tablespoons olive oil

1/2 cup grated Parmesan cheese

4 garlic cloves, minced

1/2 teaspoon Italian herb seasoning

Salt and pepper to taste

Preheat the oven to 400 degrees. Lay foil on a baking sheet and spray with non-stick cooking spray.

Chop up your potatoes, put them in a large bowl and mix in the oil, cheese, garlic and seasonings. Toss until they are fully combined.

Bake in the oven for about 30 minutes until they are done. Serve!
