Homemade Avocado Hummus
I featured Cary mom Judit Beres, owner of Neomega Nutritionals, a food company that specializes in specialty cooking oils, earlier this week. She shares this recipe for a healthy snack, that uses Neomega's avocado oil.
Homemade Avocado Hummus
2 cups organic cooked chick peas
2 TB organic tahini paste
3 cloves garlic
1/2 tsp cumin
Juice of one lemon
sea salt to taste
1/2 cup 100 percent pure avocado oil or as needed for smooth creamy texture
Chili pepper avocado oil (for topping)

Blend all ingredients, except the chili pepper oil, in blender. Taste and add more cumin, garlic or lemon juice as preferred.

I like ours a bit on the lemony side and creamy, so I may add some more avocado oil and blend another minute until entirely smooth and creamy. If serving kids, hold the chili infused avocado oil on top (though one of my kids loves the chili oil topped hummus).

If entertaining, top with the chili oil and serve with fresh veggie sticks or quinoa and flax tortillas.
