Lots of us are back to school right now. And many more of us will be sending the kids back on Monday. 

These muffins are a yummy and easy addition to breakfast on the go or the lunch box. I might just be whipping up a batch Monday morning as my daughter gets ready for (gulp) the fourth grade.

Apple Spice Muffins

2 cups of flour
1/2 cup sugar
1 1/2 teaspoons baking soda
2 eggs
1 cup vanilla yogurt
1/4 cup butter (melted and cooled)
2 teaspoons cinnamon

1 cup apples (peeled and chopped)

Preheat the oven to 375. Prepare a muffin pan with muffin cups or a cooking spray. Mix together the dry ingredients. In another bowl, whisk the eggs, yogurt and melted butter. Combine the wet and dry ingredients, add the apples and stir. Pour the batter into your muffin cups. This recipe made about 11 muffins for me. Bake at 375 for 20 to 25 minutes.
