No power? Try this recipe for tuna and white bean salad

This easy recipe is something you could definitely whip up from a couple of cans of items you probably already have in your cupboard.

As I stumbled around the packed grocery store this week, I wondered how I'd feed my family of four - and my mother - for a few days or more as we weather Hurricane Florence and its aftermath. I know we'll all eat a good amount of peanut butter and jelly if the power does go out. But could I get more creative?

Then I remembered this recipe that I've made before when there wasn't much food in the house other than what was in the pantry.

This easy recipe is something you could definitely whip up from a couple of cans of items you probably already have in your cupboard.

Tuna and White Bean Salad

1 6-ounce can tuna (I use tuna packed in water and drain it)
1 15-ounce can white beans, such as cannellini, drained
1/2 red onion, sliced thin
1/2 tablespoon capers, drained
1 tablespoon olive oil
1/2 tablespoon red or white wine vinegar

Salt and pepper to taste

Drain the tuna and beans. In a bowl, mix together all of the ingredients - tuna, beans, onion and capers. In another bowl, whisk together the oil and vinegar. Pour over the salad and mix gently.

To save a step - and another dirty bowl - you could just throw all of the ingredients in one bowl, including the oil and vinegar, and toss.

I like this best served over a bed of lettuce. This is a really filling meal for about two people (depending on your appetite).
