Holiday Recipe: Sarah's mom's corn casserole

Corn casserole is an easy dump, mix and bake recipe that's perfect for this busy time of year.

Some of us bloggers here at Go Ask Mom are sharing some favorite holiday recipes this week. And since food plays a central role in all of my family's holiday festivities ... actually in all family gatherings in general ... I knew I'd have plenty to choose from.

As I looked through my recipes trying to figure out which one to share, I always ended up back at my mom's recipe for corn casserole. At some point years ago, my mom had a bite of this casserole at a potluck and knew she had to have the recipe. It turned into one of her go-to recipes for potlucks, but also a major player in our Christmas Eve dinners.

It's an easy dump, mix and bake recipe that makes it perfect for this busy time of year.

Corn Casserole
  • 1 can cream style corn
  • 1 can whole kernel corn
  • 1 package of Jiffy corn muffin mix
  • 2 eggs
  • 1/2 cup butter
  • 1 cup sour cream

Mix all together and pour into a 13-by-9-inch baking pan. Bake at 350 degrees for 30 to 35 minutes. Sprinkle one cup cheese (cheddar, brick, Monterey Jack) and then bake for 10 to 15 minutes more or until cheese is melted and starting to brown.
