CARY, N.C. — This week's Cook like the Pros is all about fresh North Carolina seafood! Koan chef Drew Smith shows us how to make crab cakes featuring fresh North Carolina crab from Locals Seafood.
Recipe: NC Lump Crab Cake
Ingredients:
- 1 pound lump crab
- 2.5oz mayo
- 1 egg
- 1 tbsp Lusty Monk or Whole Grain Mustard
- 1 C panko bread crumbs
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tbsp chili flake
- Pinch kosher salt
- Pinch white pepper
- ¼ C yuzu or lemon juice
Gently mix all ingredients in a mixing bowl. Form into 3oz cakes making sure not to compress the mixture too much. Once formed, seared the cakes in a saute pan on medium heat for 3-4 minutes per side. Garnish with chopped scallions or chives and serve immediately. Enjoy!
