Monday meal plan 6/4
It's Monday again and that means it is time to plan our meals for the week. It is so nice to have stress-free mealtimes because I know ahead of time what we are having each night and I am not caught in that last minute meal-time panic! We have a menu full of healthy and frugal options this week. What's on your meal plan?

Grilled fat free turkey hot dogs
Sautéed zucchini, squash, mushrooms and onions (all deals at Aldi this week)
Pasta salad with tomatoes, black olives, and yellow peppers
Out to dinner with the family using a Groupon to celebrate my 5th grader “graduating” from elementary school (yes, they actually have a graduation ceremony at the high school for elementary school kids) and my 7th grader getting through her Algebra EOC. We are all so happy this school year is coming to a close that we simply have to celebrate!
Baked salmon (bought frozen at Aldi for $4.49 for a 16 oz package)
Wild rice
Steamed carrots (baby carrots 1 lb bag .99 at Aldi)
Spinach enchiladas (Old El Paso enchilada sauce bought at HT using .75/1 printable coupon from coupons.com makes it .39 after coupon doubled, fresh spinach $1.69/bag at Aldi)
Spanish rice
Corn
BBQ chicken sandwiches (chicken cooked in slow cooker)
Sweet potato fries (thanks to my sister-in-law for the local sweet potatoes from her CSA box this week!)
