What's on your menu tonight?

I don't have a meal plan this week. My dad has hip surgery on Tuesday so Monday I am going to stay with him for the week. Not sure yet how long he'll be in the hospital so dinner is up in the air for the next 5 nights. I'll go grocery shopping for his place on Monday evening so we have some things I can make while he recovers, but not sure what that will be yet.

    Tonight - chicken alfredo , salad ( fixed it early so DH could take a plate) .
    Aero - yum on the kabobs !! We fixed some last week - rain was early so all clear to grill them outdoors( double bonus !)
    ( the leftovers were great in a "everything" salad the next day).

    ASCHERER_ We had hoped to go to a 100% place but DH could not be off today. My hometown was in the totality ( in the mountains) as was my brother-in-law's place in Oregon! I was hoping to go to Knoxville or upstate South Carolina . Oh Well maybe a "day-cation" soon ...

    ascherer - life's joys are so much more enjoyable when there is no stress added to them - enjoy it from the porch! With maybe some sweet tea or lemonade!!

    I'm doing the last of my frozen food delivery items. Tonight it is seared steaks with arugula pesto and cucumber radish salad.

    YBaverage, I'm drooling over your menu. I bet that glaze on the pork will be amazing, and it would even be good cold, sliced real thin and added to a salad, if you have leftovers.

    Aerogirl, thanks for your sweet offer! LOL I actually stole some of DW's half and half for my coffee this morning. I prefer milk, but hey... it was COFFEE!

    Barbiedoll, I am super envious of your garden too, and can't even imagine how much hard work you've put into it. Enjoy! I may have to see if I can get to the farmers' market this week in Raleigh and get some tomatoes.

    I actually have a meal plan this week--I'm a little shocked, but since it's just me this week, I guess it shouldn't come as a huge surprise :). Tonight will be chicken kabobs (already put together & marinated, just have to cook them), tomorrow will be homemade chili mac, and Wednesday will be pigs in a blanket. I am sure to have enough leftovers from those two meals to finish off the week--yay for planning! :)

    Have a safe Monday everyone, and I'm sending my thoughts & prayers to all who are going through medical issues this week. JDouglas, if you need some creamer and/or half & half, I have plenty at the house--I could swing some by! (I FINALLY went to the grocery store yesterday--I think I set a new record of how long I faired with what I had around the house :).

    Thanks for the kind thoughts, everyone! My dad is really happy to be having the surgery and be out of pain soon so it's a good thing. :-)

    ybaverage2003 - your soy glaze sounds fantastic and would be good on just about any meat. I had salmon with an Asian honey glaze this weekend and it was wonderful.

    jdouglas13 - I am sending healing thoughts to your DW and hugs to you both!

    barbiedoll1967 - I'd be eating mater and cuke sandwiches every day if I had taken the time to plant a garden this summer. Enjoy yours! Next summer I am back to growing!!

    ascherer - I don't blame you. I would do the same thing you want to do and stay in the backyard and enjoy a peaceful 99% eclipse before braving the traffic and crowds. Have fun!

    Sorry everyone is going to have a rough week. Hope all the medical issues get positively resolved. I actually have a cooking plan for tonight...the rest of the week is up in the air. Going to make a soy/garlic/ginger/honey glaze and put that over $4 pork loin roast I had in freezer from previous FL sale. Will roll meat in sesame seeds after glazing & roast in oven. Adding roasted potatoes ($2.99 sale at FL) and baked beans. Since the oven will be on for the meat, putting everything in there. Keep your head up and know you have prayers being sent your way !

    To everyone watching the eclipse, please make sure you have the correct special glasses to do so. Without them you will permanently burn your retinas. As someone who has retina problems, trust me you do NOT want to do that! I wish I had thought ahead to get some of the glasses as I would love to have been able to watch.

    Ascherer, 99% sounds perfect enough for me too! :)

    Faye, sending good thoughts and hugs for your sweet Dad. Hoping he is back up on his feet and feeling better really soon.

    My DW is back in the hospital, at least for 3-4 days, so probably no cooking to speak of here this week. I am hoping to remember to pick up some milk from the store for my very much needed coffee!

    Ascherer I think it's great that you will get to see the eclipse at 99%. I hope you get some pictures and can share with us. I'm in Durham and will only get to see about 93% but I still plan on being outside and watching it.
    I think tonight I'm having leftover chicken that we cooked on the grill Saturday night. I may cut up a cucumber and a tomato from my garden to go with it! Have a great Eclipse Monday everybody.

    I'm not sure what is for dinner tonight but I will figure out something. This week and next are split weeks with me at Momma's house and home for part of each week.

    I'm going to try to watch the eclipse from Momma's backyard (99%) but DH wants to go down to Pawley's Island to see it at 100%. I'm don't want to deal with the traffic, high temps, and stupid high humidity to go with him even thought it is about 30 minutes away.
