Baked ravioli


Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

On the menu this week, we have:

Monday: Smoked turkey sausage with sauteed green peppers, mushrooms and onions served on rice. La Brea Italian bread and green beans on the side.

Tuesday - Happy Chanukah!: Beef brisket covered in McCormick steakhouse seasoning, pepper and garlic powder in the slow cooker with lots of onions & mushrooms and some beef broth. Sides of latkes (potato pancakes), noodle kugel and veggie tray and hummus.  For dessert, we are having Sufganiot (jelly donuts - traditional on Chanukah).

Wednesday: Leftover brisket sandwiches, leftover latkes, steamed broccoli florets.

Thursday: Baked coconut shrimp (shrimp $7/lb at Lowes Foods through 12/16), baked sweet potatoes and steamed mini carrots (carrots are only .69 at Aldi until 12/16)

Friday: Baked cheese ravioli (Celentano ravioli BOGO recently, shredded cheese on sale at Harris Teeter through 12/16 for Buy2  Get 3 Free) , side salad, orange slices.

    Thank you for the ideas everyone!!! We ended up having Homemade Chicken Pot Pie using Bisquick. It was delicious!! I think next time I'll make Chicken Fettuccine Alfredo! I'll have to try some of the recipes you shared, especially southwest chicken in the crock pot!

    Since I am gluten free I found an super easy delicious recipe using almond flour. Make it like pancakes in frying pan. Look up cassidy's grain free crepes in google. They are great as tortillas.

    Thanks everyone for some new ideas for chicken !
    We love homemade chicken pot pie too -
    I sometimes make it with just biscuits ( homemade, frozen or canned ) - you can pour the filling over the biscuits to get a dumpling type" bake" or put the biscuits on top !
    I love grilled chicken breasts - for cooking I brush a light coat of miracle whip & favorite spices on the sides before grilling ( indoors on the George Foreman grill - takes only 2 minutes per side ). Leftovers make a tasty chicken salad served on toasted bread or over lettuce leaves or in a tossed salad .

    faye- tortillas are easy t make, esp if you have a tortilla maker. just need masa and water.

    One of our favorite chicken dinners is Homemade Two Crust Chicken Pot Pie using refrigerated Pillsbury crusts, 2 cups cooked chicken, bag frozen mixed veggies, fresh mushrooms, large onion, bell pepper, can chicken soup, milk, cheese, and lots of cajun seasonings. Makes a large deep dish pie. Making one tomorrow.

    We also like chicken marsala made with chicken breast, chicken broth, marsala wine (from Lowes foods - $4.99 a bottle), mushrooms and onion. Cook on high 4 hours in crockpot and thicken broth with flour sluree. We love it with mashed potatoes and frozen corn or green beans.

    We had chicken quesadillas w/chicken, diced tomatoes and chili peppers (canned), cheese on homemade tortillas and chicken and wild rice soup made from leftover Walmart rotisserie chicken that my daughter got on clearance last night for $2.50.

    jdouglas- I put anchovies in my puttuanesca! Never tried chicken but shrimp is also delicious.
    Some chicken idead I havr are chicken noodle soup, stuffed chicken breast with goat cheese, mushrooms, and spinach, chicken tikka masala, green chicken curry, chicken and dumplings or gnocchi, chicken chilli. The ideas are endless since chicken is so versatile.
    Tonight we had homemade chicken noodle soup using a whole chicken roasted yesterday, carrots, celery, onions, stock from the chicken, fresh herbs. It was good on this cold day. Made some rhye bread yesterday so we had grilled cheese using colby, harvarti, and cheddar cheese. Quick, simple, and delicious- my kind of meal!

    RFB, I hear you about cleaning the crockpot. My old one was awful to clean. When I finally bought the new one (it only took like a year and a half of deliberation LOL), I got a non-stick that is also stove-top safe so I can brown stuff in it first, or quickly thicken a gravy with a slurry at the end.

    Does your pressure cooker have a rubber gasket? That was the only problem with the stove-top one I had. The gasket needed to be replaced periodically -- not the easiest thing pre-internet.
