Julia Truelove of Raleigh won the Spam Championship at this year's State Fair with her Aloha wraps recipe. Her recipe has zip and spice and is really easy to make. It’s made as a wrap sandwich but it would go with anyone’s favorite bread.

To make her award winning creation, Julia blends SPAM and cream cheese with two sauces: Worcestershire and Sriracha.

Combine that with crushed pineapple for a sweet/savory contrast, onion, celery, pecans (for some crunch) and fresh ground black pepper. Then spread on tortillas or bread.

Aloha SPAM Wraps
1 (12 oz) can low sodium SPAM, cubed
4 oz reduced fat cream cheese, softened
2 tablespoons Worcestershire sauce
1/2 teaspoon Sriracha hot chili sauce
1 can crushed pineapple, drained
1/3 cup red onion, finely diced
1/3 cup chopped celery, finely diced
1/4 cup chopped cilantro leaves
1 cup chopped toasted pecans
1/2 teaspoon ground black pepper
Lettuce leaves, chopped
6 large spinach tortilla wraps

In a food processor, blend SPAM, cream cheese, Worcestershire, and Sriracha. In a large bowl, mix together SPAM mixture, pineapple, onion, celery, cilantro, pecans, and pepper. Spread heaping 1/3 cup of mixture on each tortilla, leaving roughly an inch around the perimeter of the tortilla. Top with lettuce. Fold both the right and left edges in over the spread and roll from the bottom. Slice each roll in half. Serves 6.
