Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like.

If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

In the photo above, you can see the Roasted Red Potatoes I made with dinner last night. They were so easy and so delicious!

Roasted Potatoes

Ingredients

Red Potatoes, 3 lb bag

Olive oil (approx 1 - 2 tbp)

Pepper, garlic powder, Italian seasoning and salt to taste

Directions

Quarter the 3 lb bag of potatoes then added a tablespoon or so of olive oil, fresh ground pepper, garlic powder, Italian seasoning and a dash of sea salt. Mixed it all together so the potatoes are coated with the oil and spices.

Put potatoes on a sheet pan in single layer (I cover the pan with aluminum foil before putting potatoes on pan). Roast potatoes on 450 degrees F for about 25 - 35 minutes until browned to your liking. Some people like them soft and less brown and some like them crispy on the outside so cook according to taste.

They were so good and there are plenty of leftovers tonight with roasted carrots and mushrooms! And I got the bag of potatoes in the marked down bin at Harris Teeter Sunday evening for only $1.00!
