Variety of Dumplings, With a Pickle Chaser

Jacob Hadjigeorgis first made his mark on the Upper West Side with pickles: Jacob’s Pickles, then Maison Pickle. It was Maison Pickle’s best-selling shrimp pillow dumpling, an odd winner in a place that specializes in French dip sandwiches, that inspired his latest venture, combining pickles and dumplings. “I’m going with what’s popular,” he said. His new storefront, mostly for takeout, has six varieties of dumplings, with the delicate shrimp among them; three noodle dishes, including a meaty, modestly spicy dan dan; and, of course, pickles to order from a kiosk in the store, an app or online for pickup or delivery.
