Two Roosters serves up State Fair-inspired flavors

RALEIGH, N.C. — Popular food truck Two Roosters Ice Cream is serving up some N.C. State Fair-inspired flavors in the Got to Be NC building at the fairgrounds. They will be there until Tuesday.

Fried Oreo - This had two inspirations. One, the deep fried Oreo that everyone (ok, some people) loves at the fair. Two, the mini donuts found at the fair. We took our traditional recipe using Sola Coffee's Mini Donuts but removed the cinnamon sugar and replaced it with Oreos. What is left is a fried dough taste in the base, married with milk's favorite cookie. Fried Oreos in frozen form.

Chocolate with Candied Bacon and Maple Syrup ripple - We had to have a chocolate ice cream on the menu for the chocoholics, but we wanted to spice it up with something nice. Chocolate base with crispy, brown sugar nibs with a decadent maple syrup ripple. Rich, sweet, salty, with State-Fair excess. I don't want to sound morbid, but the inspiration for this one started with our favorite fair activity, the Hogway Speedway.

Krispy Kreme Donut - While our hearts can't take the Krispy Kreme burgers, a scoop of this will suffice. We start by making a trip to Peace St to make sure the "Hot Donut" light is on. Take the fresh donuts to the kitchen, and steep them in the ice cream base for more than 24 hours. A labor of love, for people we love. No chunks, just a smooth scoop that makes people say "it really tastes like a glazed donut"

Whiskey and Pecans - The candied nut stands at the fair are some of our favorites. The smell, particularly. We took our inspiration from these stands to make our own candied pecans. We wanted to add a layer of flavor complexity so we visited our friends at TOPO distillery and magic was made. A scoop of this is also a great way to end the evening before fireworks.

Coffee and Bourbon - The days of the fair are long and tiresome for some. We were thinking of the early birds and the wearisome moms and dads that need a little boost during the Fair. We created this flavor in tandem with our local partners, Slingshot Coffee and Mystic Bourbon. It's divine.

Pizza - This flavor was created with similar ingredients to your favorite pizza. WRAL tried it and it is actually really good. Tastes like cold pizza but in ice cream form. Really fun and delicoius.
