Most of my family's Christmas cookies involve chocolate - usually the milk or dark kind. But these, featuring peppermint candies and white chocolate, are a newer favorite. And they are so easy to make!

Most of my family's Christmas cookies involve chocolate - usually the milk or dark kind. But these, featuring peppermint candies and white chocolate, are a newer favorite. And they are so easy to make!

White Chocolate Peppermint Cookies

1 1/2 cup and 1/2 cup all-purpose flour, separated
1/2 tsp. baking powder
1/8 tsp. salt
1/2 cup butter, softened
3/4 cup sugar
1 large egg
3/4 tsp. vanilla
1/3 cup crushed peppermint candies (That's about 1 candy cane or 10 peppermint candies, crushed)

Preheat oven to 375

Mix the 1 1/2 cup flour, baking powder and salt in a small bowl. Cream together the butter and sugar. Then add the sugar, egg and vanilla. Combine. Then mix in the dry ingredients. Add in the crushed peppermint candies and 1/2 cup of flour. Mix. Place some parchment paper on your cookie sheet and roll the dough into one-inch balls. Bake for 12 minutes and let cool.

Once the cookies are cooled completely, dip half the cookie in melted white chocolate. I use Ghiradelli white chocolate melting wafers, which easily melt in the microwave. Place the dipped cookies on parchment paper to let dry.

Makes about two dozen cookies.
