Honey Guava Sriracha Wings from Spanglish

Looking for a chicken wing to wow your friends at this weekend's Super Bowl party?

The folks at Spanglish, which has restaurants in Durham and Raleigh and a food truck, have shared this delicious recipe with us just in time for the big game.

Honey Guava Sriracha Wings

Chicken marinade

  • 4 lbs party wings
  • 2 tbsp salt
  • 2 tbsp sazón of choice
  • 1 tbsp onion powder
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 cup mesquite liquid smoke
  • 1/2 cup sriracha
  • 1/4 cup apple cider vinegar
  • 1/4 cup clover honey
  • 2 cups grapefruit juice
  • 1 bottle wheat beer (optional)

Instructions:

  1. Mix well
  2. Marinate chicken overnight

Honey Guava Sriracha Sauce

  • 2 bricks (total 28oz) guava paste
  • 2 cups water
  • 1 cup Sweet Baby Rays Regular Barbecue Sauce
  • 2 tbsp honey
  • 2 tbsp sriracha
  • 1 tbsp minced garlic
  • 1 tsp red pepper flakes
  • 1 tsp unsalted butter

Some commentary here, this sauce is intended to taste more like guava than it does barbecue. The order of ingredients being added is to make the sauce very fragrant, with a slow-burning kick, and not overly sweet.

  1. Melt butter over medium heat and add garlic and red pepper flakes
  2. Sautee until fragrant
  3. Cut guava paste into small
  4. Add water to pot, increase to high temp
  5. When water boils, add guava cubes
  6. Stir until guava is melted
  7. Reduce to a simmer over medium-low heat
  8. Add rest of ingredients and mix well
  9. Simmer for 1 hour or until desired thickness

Cooking the wings

  1. Preheat oven to 375 degrees
  2. Place wings on baking sheet lined with foil, if you have a rack to raise them up, even better... just spray with cooking oil spray
  3. Bake in preheated oven for 45 mins, flipping them over after the first 20 minutes.
  4. If chicken hasn’t reached 165F internal temp, add time in 5 minute increments until it does
  5. Remove from oven, glaze in the sauce, return to oven for 10 minutes
  6. Once sauce is caramelized, remove from oven
  7. Serve and enjoy!
