Slow cooker chicken taco

This recipe comes straight from a fellow mom on the sidelines of our kids' soccer games. When the moms among us talk about what we were cooking up for dinner, she often shares this super easy slow cooker recipe.

I'll admit to being skeptical at first. For whatever reason, a lot of the chicken I cook in the slow cooker gets kind of dry and rubbery. But, she talked it up so much and it sounded so easy, I thought I'd give it a shot.

Result: This one is going in our very regular meal rotation. So, thank you, follow soccer mom (you know who you are!).

Slow Cooker Chicken Taco

1 pound chicken breasts
3 tablespoons taco seasoning (or the standard-sized packet of seasoning you find in the grocery store)
Chicken broth - enough to cover the breasts. I used one cup.

Put everything in your slow cooker. Cover. Cook on low for 6 to 8 hours. Shred the chicken in the pot so it mixes well with the seasoned broth. Serve on tortilla or taco shells with all of the fixings. This also would be delicious over rice with taco toppings.
