Sausage and potato bake

We are not big casserole eaters at my house, but I do search out one-pot or pan recipes that don't require me making a huge mess in the kitchen.

This easy recipe is a family favorite. Everybody definitely leaves the table with a full belly when we're done!

Sausage and Potato Bake

1 pound sausage links, cut into 1-inch pieces (Use pork, turkey or whatever kind you like).
6 small potatoes, quartered (I usually use Yukon Gold. Red potatoes would work)
2 bell peppers cut into 1-inch pieces (Any color - green, red, yellow, orange - will work!)
1 large onion, sliced or quartered
4 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon fresh rosemary (or 1 tsp. dried)
1 teaspoon tried thyme leaves
Salt and pepper to taste

Preheat your oven to 425. Put everything in a large baking dish with a rim. Bake for about 40 to 45 minutes when the sausage should be cooked through and the vegetables are tender. This is great with some crusty bread (but isn't everything?).
