Recipe: Peach cobbler
I had some peaches that were about to go bad a day or so after buying them. So I made peach cobbler out of my nearly very mushy peaches. This recipe, which I found on myrecipes.com, was so easy and delicious! Serve with some whipped cream, ice cream or, as I did growing up, a splash of milk on it.
Peach Cobbler
1/2 cup unsalted butter
1 cup all-purpose flour
2 cups sugar, divided
1 tablespoon baking powder
Pinch of salt
1 cup milk
4 cups fresh peach slices
1 tablespoon lemon juice (I used lime juice because I didn't have lemon and it worked out just fine).
Ground cinnamon or nutmeg (optional)
Instructions
Preheat oven to 375 degrees. Melt butter in a 13- x 9-inch baking dish. (I did this by putting the pan in the oven while it preheated and I got the rest of the recipe ready).
Mix flour, 1 cup sugar, baking powder, and salt; add milk, stirring just until dry ingredients are moistened. Pour batter over butter (don't stir!).
Bring remaining 1 cup sugar, peach slices, and lemon juice to a boil over high heat, stirring constantly; pour over batter (do not stir). Sprinkle with cinnamon, if you want. I did.
Bake at 375° for 40 to 45 minutes or until golden brown. It's yummy warm or cool.
