Recipe: No-bake oatmeal bites

Measure out the ingredients, roll them into 24 balls and you're ready to toss a few in your bag as you're running out the door to the park, for a hike, to the ball field or wherever the spring takes you!

Spring is here! The great outdoors are calling us out to enjoy the fresh air before all that pollen ... but what happens when you’re a mile from the car and little ones run out of gas and just. can’t. take. one. more. step?

Enter these No-Bake Oatmeal Bites from FIT4MOM’s Body Well Nutrition Guide & Recipe Book. This recipe was originally created by the FIT4MOM dietitians to offer a healthy grab-and-go snack option for moms in the Body Well Coaching group. But as it turns out- the kids like them too!

Measure out the ingredients, roll them into 24 balls and you’re ready to toss a few in your bag as you’re running out the door to the park, for a hike, to the ball field or wherever the spring takes you!

No-Bake Oatmeal Bites

(Makes 12 servings)

1 cup (dry) oatmeal
1 cup toasted coconut flakes
½ cup carob or mini chocolate chips
½ cup peanut butter
½ cup ground flax seed
⅓ cup honey
1 tsp vanilla

Stir all ingredients together in a medium bowl until thoroughly mixed.

Let chill in the refrigerator for 30 minutes.

Roll into balls about 1” in diameter.

Store in an airtight container and keep refrigerated for up to 1 week; can also be frozen.

This recipe makes 24 balls.
