North Carolina also boasts an official red berry, the strawberry, and official blue berry. You guessed it, it's the blueberry.

Our friends over at the YMCA of the Triangle share this recipe for blueberry cream cheese pastries.

It's an easy recipe for a weekend morning or after school treat and features the berry, which is packed with antioxiaents and vitamin C.

Blueberry Cream Cheese Pastries

1 pkg of pie crust dough (alternatively, you could use refrigerated crescent rolls)
4 oz cream cheese, softened
2T sugar
1/2 - 1 cup blueberries

Unroll the pie crust and cut into four squares. Cream together the cream cheese and sugar. Spread onto dough, top with blueberries. Pull up corners and press down to seal. (The dough will not completely cover the cream cheese mixture.)

Bake at 375 degrees for 10 to 15 minutes or until brown on top.

Says the YMCA: "This is a forgiving recipe - a little more or a little less cream cheese or sugar or berries won't hurt. We've also seen this recipe made with crescent rolls or even biscuits."
