Pineapple Sol owners realize dream of opening restaurant

Pineapple Sol started as a picnic and catering business in early 2021. Now, the owners are opening their first restaurant in Cary's Waverly Place.

Nearly a year go, WRAL Out and About introduced you to Pineapple Sol.

The picnic and catering business was founded by friends Dahiana Vitabar and Aleena Azhar at the beginning of 2021. The goal was to help set up decorative picnics, high teas and other outdoor events, as well as offer catering services.

At the time, Azhar said that the concept stemmed from their goal of opening up a brunch restaurant. At the time, they shifted plans for a brick-and-mortar restaurant due to COVID concerns.

Now, the friends are finally opening that restaurant. Pineapple Sol will open on Saturday in Cary's Waverly Place shopping area. The restaurant and cafe is in the former Fresca location near Amazing Lash Studio and Whole Foods Market.

The interior is a nod to their beach-inspired name with bright colors and comfortable bench seating. While the indoor seating is nice, their collection of outdoor tables are really going to be nice to enjoy as the weather gets warmer.

Pineapple Sol's menu reflects that of the brunch restaurant the owners had always wanted to open. Breakfast, lunch and brunch selections include takes on the traditional menu items.

Breakfast selections include a mix of sweet and savory - items include an Acai Bowl, Huevos Rancheroes Breakfast Sandwich and Churro French Toast (topped with caramelized banana and vanilla-infused mascarpone cheese).

Brunch is where things get even more fun with the Lavender Honeycomb Pancakes topped with whipped lavender honeycomb butter, and shareable items including loaded truffle fries, salsa, sweet potato and seasoned fries. There is also a morning tostada that features has two sunny-side-up eggs over black beans and sauteed fresh veggies and topped with queso fresco, salsa and sour cream.

The Sunny Benny features poached eggs topped with Hollandaise sauce and served over sauteed spinach, crispy potato tots on rustic toast. You can get it with fried chicken, turkey bacon or lox. We suggest the chicken!

The Garlic Avocado Grilled Cheese is just cheesy enough to be kid-friendly! It is served open-face with mashed avocado covered in cheese and toasted on sourdough bread. There is a children's menu too, but this could easily be a shareable item with your little ones.

Lunch selections include sandwiches and wraps served with fries or a side salad. There are paninis (tuna and balsamic glazed Caprese), wraps (chicken Caesar and grilled zucchini hummus) and traditional sandwiches (chicken salad croissant, turkey club, caramelized onion steak).

As caterers, Pineapple Sol was known for its Charcuterie boards. They business is still catering, but you can also find some of their dessert selections in the cases at the restaurant. There are cupcakes, blondies, cake and other sweet treats to enjoy along with one of their lattes at the coffee bar.

Pineapple Sol opens on Saturday, March 5, at 302 Colonades Way, Suite 109, in Cary. It is open Monday through Friday 7 a.m. to 5 p.m. and 9 a.m. to 3 p.m. on Saturday and Sundays.
