Monday meal plan: French dip, pesto chicken wrap, veggie lasagna & more!

The lemon herb chicken recipe I used for the whole chicken last week was a hit. You can see the picture above. Everyone loved it, including one of my daughter’s friends. She and my daughter just about picked it clean! You can find the recipe at allrecipes.com.
I am made some small changes to this recipe based on the comments including adding a quartered onion, 5 cloves of fresh garlic, fresh rosemary and the squeezed lemon halves to the cavity prior to roasting. I also omitted the mustard powder and doubled most of the other spices so I could rub them under and over the skin . In addition, I added some chicken broth at the bottom of the pan for basting every 30 minutes.
