On the frugal menu this week we have pot roast, tilapia, omelets and more. Read on for the entire meal plan and a couple recipes, as well.

On the frugal menu this week we have pot roast, tilapia, omelets and more. We all like breakfast for dinner every couple weeks and it's a very frugal option.

Monday
Sandwich night (choice of roast beef, tuna or veggie burger sandwich on whole wheat bread with fresh spinach and tomato slices)
Mac and cheese (using free box from Kraft freebie I posted a couple weeks ago on the blog)
Apple slices (on sale at Food Lion for $1/lb when bought in 3 lb bag and HT for $1.29/lb)

Tuesday
BBQ Beef sandwiches (london broil cooked in crock pot on sale at Lowes Foods for $2.79/lb and Food Lion for $2.59 through 5/25)
Long grain and wild rice
Steamed carrots with a little butter and fresh rosemary (baby carrots were on sale last week for .99/lb)

Wednesday
Baked ravioli (Celantano frozen ravioli BOGO for $2.50 at Lowes Foods through 5/25, Kraft cheese BOGO for $1.35 at HT through 5/25, Classico on e-vic special and FREE with super doubled $1.50 coupon through 5/25)
Broccoli (free Steamfresh from Lowes Foods a couple months ago with store coupon and manuf coupon combined)
Garlic bread

Thursday
Pot Roast with mushrooms, onions and sweet taters
(Eye of round roast on sale at HT through 5/25 for $2.99, mushrooms on sale at HT for $1.89)
Salad
Rolls

Friday
Baked Tilapia ($4/lb frozen at Walmart)
Mahatma rice (free at HT and Lowes recently with .75/2 coupon doubled)
Salad

Saturday
Out to dinner using a Groupon coupon!

Sunday
Breakfast for dinner!
Omelets with choice of ingredients (choose from mushrooms, onions, green peppers, veggie bacon, cheese)
Toast
Fresh fruit (not sure what yet – waiting to see what is on sale starting on Wednesday)


Baked Ravioli Recipe

Ingredients
1 bag frozen light or regular cheese or meat ravioli, approx. 24 oz
1 jar pasta sauce, approx. 26 oz
4 oz. shredded mozzarella cheese or Italian cheese mix, lowfat
2 oz. grated parmesan cheese
Garlic powder to taste
Italian spices to taste

Preheat oven to 350 degrees. Spoon 1/3 jar over bottom of 13 X 9 pan. Place frozen ravioli on bottom of pan evenly. If you have a couple extra ravioli once bottom is covered, place them on top of other ravioli. Pour the remaining sauce on top of the ravioli and around the edges to cover the ravioli. Add the garlic powder and spices to taste. Sprinkle the mozzarella cheese and the parmesan cheese over the top. Cover with tin foil & bake for 25 minutes. Remove foil and bake for another 10 minutes. Serve with garlic bread and a salad. Enjoy!

Additions: you can easily add your favorite veggies like spinach, green peppers, onions and mushrooms or diced cooked chicken or cubed tofu to this dish. Place them on top of the ravioli before adding the sauce and cheese.


Easy Crockpot BBQ Beef Recipe

You can use beef or chicken in this delicious and easy barbecue recipe.

Ingredients:
1 and ½ to 2 and ½ pounds london broil (or chicken breast)
½ bottle of your favorite barbecue sauce
½ onion, chopped
½ tsp. Garlic powder (or more if you prefer)
Pepper to taste

Put london broil in slow cooker. Season with garlic and pepper. Pour barbecue sauce over meat and add onion. Cover and cook on Low for 7 to 8 hours, until fully cooked and tender. Check at 7 hours to see if done. Cut into very thin slices or pull apart with a fork to make BBQ sandwiches. Serves 4. Delicious!
