Tuesday

I’m working late so hubby is in charge of feeding the kiddos.

Salmon burgers on buns - BOGO Trident salmon burgers at Lowes Foods through 5/3

Creamy garlic tofu and mushrooms (using Philly Savory Garlic Cooking Cream free from HT super doubles through 5/3 with $1.50/1 coupon) – I am making up this tofu recipe so we’ll see how it goes. I am going to cook it on the skillet and serve it over brown rice. I will probably throw in some fresh spinach as well….yum!

Graduation party for my cousin who is graduating from UNC – Congratulations Ashleigh! Not sure what we are having for dinner but I don’t have to cook or wash dishes so it will be FABULOUS no matter what it is!

Sunday – Happy Mother’s Day to all the moms!

I prefer not to cook on Mother’s Day so hubby and kids are going to surprise me with dinner (I can’t wait to see what they come up with!).

Breakfast and lunch: Here are are some of the breakfast and lunch foods we'll be eating this week.

Healthy lunches this week include veggie burgers, turkey sandwiches, chicken salad, cottage cheese on bed of tomatoes and lettuce, egg salad (using only hard boiled egg whites - no yolks) on whole wheat bread

Healthy breakfasts this week include fat free yogurt with fresh fruit and a sprinkle of multi-grain cereal, veggie sausage links dipped in applesauce, multi-grain cereal with fresh fruit, blueberry pancakes and yogurt and fruit smoothies
