Sneak peek inside new North Hills restaurant

Sushi, spring rolls, dumplings and curry are all on the menu at CO, which opened this week in the ground floor of the AC Hotel at North Hills.

CO offers a modern take on traditional Southeast Asian cuisine. Founded in 2012 in Charleston, S.C., the restaurant also has locations in Charlotte, Atlanta and Savannah, Ga., and Myrtle Beach, S.C.

We had a chance to check out some of the menu, which has a lot of selections, and here are a few of our favorites:

Curry Laksa with shrimp – Managers described this as the restaurant's signature dish, and it lived up to the hype. It contains tons of shredded chicken and shrimp, bun rice noodles, shredded cucumber, Thai basil, baby bok choy in a spicy coconut broth. It is spicy but really good!!

Spicy Crab Rangoon – Crispy and perfect for sharing. We didn't find these too spicy at all.

Beef and Kimchi Dumplings – Served in a sambal chili broth, these were filled with beef and really good.

Korean Rice Bowl – There is a lot in this bowl, so be prepared. You get marinated wok steak, kimchi, sprouts, edamame, cucumber and pickled carrots served over jasmine rice with sweet-and-spicy gochujang sauce, and it's all topped with a sunny-side egg. The blend of flavors is really nice.

Crispy Cheesecake Wontons – These bite-sized snacks are even tastier when you dip them in the vanilla anglaise. The candied oranges are also a really nice flavor kick.

CO is open for dinner service this week. The grand opening (and start of lunch service) will be at 11 a.m. Monday, March 26.
