Easy to make with lots of flavor, these cookies have been a favorite in my house since we made them way back in July.

Chewy Chocolate Raspberry Cookies

1 1/2 cups all-purpose flour
1/4 cup dark cocoa powder
3/4 teaspoon baking soda
1/2 teaspoon salt
10 tablespoons unsalted butter, softened
1 cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
3/4 cup semisweet chocolate chips
1/2 cup white chocolate chips
1/2 cup freeze-dried raspberries

Preheat oven to 375.

In one bowl, combine the flour, cocoa powder, baking soda and salt. In a larger bowl, beat together the butter and brown sugar for about four minutes. Then beat in the egg and vanilla. Pour the flour mixture into the wet ingredients and beat on low until it is mixed together. Stir in the chocolate chips, white chocolate chips and freeze-dried raspberries.

Line a baking sheet with parchment paper. Roll the dough into balls that are about 1 1/2 inches big. Place them on the cookie sheet about two inches apart. Bake for 12 to 15 minutes. This recipe makes about 24 cookies.
