Recipe: Easy tomato soup

Traditional calendar schools will be back at it on Monday, which means plenty of parents around here are looking for something new to put in those lunch boxes. Here are 10 recipes to try out!

Easy Tomato Soup

This is a new one that will make an appearance in their lunch boxes, along with cheese, crackers, fruit and veggies. I found it on Food Network's website. It's so easy, you can make it in the morning. Just blend together a 28 ounce can of whole tomatoes with the juice; 1 roughly chopped celery rib and 1 cup low-sodium chicken broth. Then, pour in 1 to 2 teaspoons of fresh lemon juice and 1 tablespoon of pure maple syrup (or the same amount of agave nectar, which is what I had on hand). Then stir in 1/4 to 1/3 cup cream. Heat in the microwave so it's warm enough to fill in a thermos. That's it! It makes for a wonderful, quick lunch or dinner too.
