6 Recipes: Read to bake? Try these easy quick bread recipes
Editor's note: Here's an updated oldie, but goodie Go Ask Mom post.
I'm a long-time lover of quick breads. They are so yummy. But, even better, they are incredibly easy to make and a fantastic thing to make ahead, freeze and thaw for later. In fact, I'll slice them frozen and stick pieces in my kids' lunch boxes. By lunch, they are thawed and ready to eat!
My secret for the perfect quick bread is this: Spray your bread pan with some nonstick cooking spray, then line it on all sides with a single piece of parchment paper so you can easily remove the loaf from the pan.
Happy baking!
Amish Cinnamon Bread
With just a handful of ingredients, this turns out an amazingly moist and delicious bread. I'm pretty sure my family can eat an entire loaf in a day.
Pumpkin Chocolate Chip Bread
There is almost always a loaf of this bread in the freezer at my house. Moist, delicious and kind of healthy? Maybe? (There is some pumpkin in there, after all).
Double Chocolate Chip Banana Bread
It's like a rich chocolate break that you can eat for breakfast!
Summer Squash Chocolate Quick Bread
Yes. I like chocolate. And I like putting mini chocolate chips in my quick breads. This one included.
Banana Butterscotch Quick Bread
Perfect for those overripe bananas and that half bag of butterscotch chips that's hanging around your cupboards.
Spiced Pear Bread
Yes - this was originally a muffin recipe. But there's a fun fact: You can convert a muffin recipe to a quick bread recipe by simply dropping the oven temperature by 50 degrees and baking for a longer time period - usually about 60 to 70 minutes. For me, this recipe takes about 60 minutes in the oven. But be sure to start pulling it out around 60 minutes to ensure that you don't over bake it. You'll know it's done when you stick a toothpick into the middle of the loaf and it comes out clean.
