Two Roosters opening up its new location in Person Street Plaza

The destination ice cream shop, Two Roosters has launched its pop-up location in Person Street Plaza and said they are there to stay.

Jared Plummer, owner of Two Roosters said sometime in October they will close the Person Street location for a few months to finish renovations, but they do plan to re-open there in the spring.

Starting as a local, turquoise-blue food truck, Two Roosters has grown its brand throughout the Triangle, with its home base in Greystone Village Shopping Center in North Raleigh. Its new location in Person Street Plaza has neighbors featured in their flavors, like Yellow Dog Bread Company.

The Person Street shop will feature all the same flavors as the original location, like its trademark Girl Scout Mint, Sola Cinnamon Donut and Blackberry Hibscus. Plummer will also translate the shop's guest flavors, which rotate monthly, to the Person Street shop.

"Each month I have sort of a theme that I do," Plummer said. "So every month, depending on the theme, it depends on the flavors."

For the month of August, Plummer has been partnering with local bakeries to create unique, subtle tastes. Flavors like Sea Salt Chip Cookie Dough, Pecan Sticky Bun and Chocolate Brownie and Fudge are local to Raleigh starting with the ingredients.

Plummer and his team at Two Roosters are still catering events, concerts, weddings and operating their food truck. On top of their 40 weddings a year, Plummer and his crew make their ice cream every morning at the north Raleigh location and drive it the pop-up location so that its menu will match the original shop.

"We try to keep the business simple: treat people how you want to be treated, and make ridiculously good ice cream," Plummer said. "There's a lot of details in that, but that's sort of what I go back to when things get crazy."

Two months ago, Two Roosters introduced the "flight" — four small cups where a customer can pick different flavors. Plummer explained that customers were coming into the store wanting to try all the different flavors without wanting to sample everything. The flight will not be available at the Person Street location until the spring.

Because the Person Street shop is a couple hundred square-feet larger than the Greystone Village location, Plummer said he hopes to have a small event space for meetings and gatherings.

But Plummer is most excited about the exterior of the new location; the new shop is painted the famous Two Rooster turquoise blue.
