Here are some pictures from the Southern Women's Show this weekend including a couple of our fabulous fellow Smart Shoppers! I've also included the pasta recipe I made at the cooking stage on Sunday.

I want to thank Aldi for generously donating the food I prepared during the cooking stage class! I just love their fruit and veggie deals every week and they have very good everyday prices on so many items we buy regularly like cream cheese, whole wheat bread, eggs and more!

Above are some pictures of Holly and Juanita (and her adorable daughter) who visited the booth on Saturday. My thanks to everyone who stopped by the booth and those who stayed for the classes! It was WONDERFUL to see all of you! I just wish I had been more on the ball and taken more pictures of our fellow Smart Shoppers!

For those who asked for the recipe for Creamy Chicken Primavera that I made at the cooking stage, here it is:

Creamy Chicken Primavera

Ingredients

1 lb pasta (penne and shells work very well)
2 tbsp. light Italian dressing
1 to 1.5 lbs chicken breast, cut or shredded into bite-size pieces (the chicken will have added taste if you marinade it in the Italian dressing for a few hours before cooking).
6 – 8 cups of your favorite vegetables cut into bite-size pieces. I like using zucchini, multi-colored peppers and mushrooms.
8 oz. light cream cheese (Neufchatel Cheese), cut into cubes
1 cup low sodium, fat-free chicken broth

¼ - ½ cup Parmesan cheese (depending on how cheesy you want it)

Chop the vegetables and chicken. Cook pasta. While pasta is cooking, heat the dressing in a large skillet on medium heat. Add the chicken and vegetables. Cook 10 – 12 minutes until chicken is fully cooked, stirring often. Once chicken is cooked, add broth and cream cheese. Cook until cream cheese is melted, about 1-2 minutes, stirring constantly. Mix in the Parmesan. Once pasta is cooked and drained, return it to the pan. Pour the chicken and vegetable mixture over the pasta so it is fully heated. Enjoy!
