After long days at the pool or hot afternoons in the yard, I'm looking to cool off with an easy - and light - dinner.

This recipe makes for a perfect side dish that features lots of in-season produce and can be easily made ahead so when it's time to eat, you're ready to put something on the table.

Watermelon, Peach, Tomato and Feta Salad
Two cups chopped watermelon
One cup fresh, chopped peaches
One cup fresh, chopped tomatoes
1 tablespoon freshly squeezed lime juice
1 tablespoon chopped, fresh basil

1/2 cup of feta cheese

Add the watermelon, peaches and tomatoes and toss with the lime juice. Stir in the basil. Then, toss in the feta - 1/2 cup is a ballpark amount. Use more or less feta, depending on how much you have and how much you like it. Serve cold.
