Recipe: Watermelon-ginger agua fresca

Carrboro Farmers' Market shares this recipe for a refreshing drink as they prepare to celebrate melon day on Saturday.

Carrboro Farmers' Market will be hosting a melon tasting starting at 8:30 a.m., Saturday. The market will offer a chance to taste melons of all kinds, along with samples of melonberry popsicles. There also will be recipes to take home and kid's activities. 
I asked the folks at the market to share a recipe using melon. They came back with this refreshing drink found originally at Epicurious.com.
Watermelon-Ginger Agua Fresca

Ingredients
10 cups 1-inch pieces peeled watermelon (from about 8-pound watermelon), seeded, divided
3 cups cold water, divided
1/3 cup fresh lime juice
1/4 cup (or more) sugar
1 1/2 tablespoons fresh ginger juice* (you can buy it or make it yourself. Check the original recipe for instructions.)
Ice cubes
Lime wedges

Directions
  • Puree 2 1/2 cups watermelon and 3/4 cup cold water in blender until smooth. Pour the juice into a large pitcher and repeat three more times.  
  • Mix in the lime juice, 1/4 cup sugar, and ginger juice to your pitcher and stir. You can add more sugar to the juice if you want it sweeter. 
  • Refrigerate for at least 3 hours. You can make it eight hours ahead, but make sure it's chilled and stir before serving.
  • Serve over ice with a slice of lime. 

You could add some sparkling water to make it into a soda. One person, in the comments, shared that she skipped the ginger juice and cut the sugar and added ginger ale instead.
