When temps fall and family activity schedules heat up- a pot of chili feeds the family and can be made ahead and reheated for busy evenings. This Turkey Chili recipe from FIT4MOM’s Body Back Recipe book is hearty and healthy. Enjoy!
Turkey Chili
Serves: 5
Serving size: 1 cup
1 Tbsp olive oil
1 lb lean ground turkey
1 medium onion, chopped
1 large red bell pepper, seeded and chopped
3 garlic cloves, minced
1 (14 oz) can diced tomatoes
1 (15 oz) can kidney beans, rinsed and drained
1 cup water (more or less for desired consistency)
1 Tbsp chili powder
1 tsp each of cumin, oregano, coriander and red chili flakes
Heat oil in a medium sized pot. Brown the ground turkey over medium heat. Add onion, pepper and garlic and saute until soft. Add remaining ingredients and bring to a boil. Lower heat, cover and simmer for 1 hr, adjusting seasoning as desired.
Top with cheese, sour cream or plain yogurt, avocado slices or enjoy just as it is!
