Recipe: Spaghetti and vegetable salad

This easy recipe is great for those days when you have leftover spaghetti and veggies in the refrigerator. Add in some grilled chicken, and you've got a full meal.

This easy recipe is great for those days when you have lots of veggies in the refrigerator. Add in some grilled chicken, and you've got a full meal.

Spaghetti and Vegetable Salad

1 pound box of spaghetti
4 cups chopped vegetables

1 1/4 cup Italian dressing - bottled or homemade

Cook the spaghetti according to the package. Once done, drain and rinse immediately in cold water to cool it down.

Chop up the four cups of vegetables. Just about any vegetable will do, but my family's favorites include red onion, tomatoes, bell peppers, black olives, cucumbers, summer squash and peas.

In a large bowl, combine the pasta and vegetables. Pour the dressing over the salad and mix until it's well combined. This salad is great when it's had time to sit in the refrigerator for a few hours.

If you don't have Italian dressing on hand, make a simple vinaigrette with 3/4 cup olive oil, 1/4 cup red wine or white wine vinegar and some salt and pepper.
