The Poe Center for Health Education is offering up all kind of virtual activities and tips to stay healthy, and that includes sharing recipes on YouTube.

Recently, Kristie, a health educator at the Poe Center, shared an easy and healthy recipe for roasted vegetables, along with tips for safe cooking and clean up.

Roasted Veggies

3 zucchini, sliced
2 yellow squash, sliced
1 bell pepper, sliced
1 red onion, cut in wedges
8 ounces whole mushrooms
1 garlic clove, minced
1 tablespoon balsamic vinegar
1 tablespoon olive oil
1 tablespoon rosemary

1 teaspoon salt

Preheat oven to 450 degrees. Line a cookie sheet with foil and spray with some nonstick spray.

In a large bowl, combine all ingredients except for the rosemary. Spread the ingredients out evenly on the prepare sheet. Sprinkle the rosemary or lay a couple of rosemary sprigs on top of the vegetables

Bake for 30 to 40 minutes, stirring once. The vegetables are ready when they start getting a little brown on the edges.
