I like to double this quick and easy recipe so I have leftovers for lunches and dinners on busy nights.

Roasted Honey Mustard Chicken Breasts

4 tablespoons olive oil
3 tablespoons honey
2 tablespoons whole grain mustard
5 cloves garlic, peeled and minced
2 tablespoons fresh lemon juice
2 pounds boneless skinless chicken breasts

Salt and pepper, to taste

Preheat oven to 400 degrees. Line a baking sheet with foil and spray with some non-stick spray.

In a small bowl, mix together the honey, oil, mustard, garlic and lemon juice.

Put the chicken breasts on the baking sheet. Sprinkle with salt and pepper. Evenly spread about 3/4 of the honey mustard sauce over the chicken. Bake for about 20 to 30 minutes until a meat thermometer stuck in the thickest part of the breasts measures 165 degrees.

Then, spoon the rest of the sauce over the cooked chicken breasts and broil for three to four minutes on medium-high heat. Keep a close eye on the chicken as it broils to ensure that it doesn't burn.

Let the chicken rest for about five to 10 minutes. Serve.
