Recipe: Roasted Brussels sprouts with bacon

This is, by far, my favorite way to eat Brussels sprouts. This dish is a regular on our Christmas table each year.

This is, by far, my favorite way to eat Brussels sprouts. This dish is a regular on our Christmas table each year.

Roasted Brussels Sprouts with Bacon

1 pound Brussels sprouts, halved lengthwise
1/4 pound bacon, chopped into small pieces
1/2 small onion, thinly sliced
1/2 tablespoon olive oil
1/2 tablespoon balsamic vinegar

Salt and pepper to taste

Bring a large pot of water to a boil and add the Brussels sprouts to the boiling water. Boil for about five minutes, drain and rinse with cool water, so they stop cooking.

In a skillet, over medium-high heat, cook the bacon. Once it's crispy, take out the bacon, drain the fat and then add the onion. Cook the onion until its translucent. Add the Brussels sprouts to the skillet. Stir fry until the Brussels sprouts start to brown. Then add in the bacon and balsamic vinegar. Sprinkle salt and pepper to taste.
