Recipe: Roast beef and blue cheese wraps

Advocates for Health in Action will launch a Healthy Brown Bag Challenge this month, which will feature healthy lunch options such as this wrap.

Advocates for Health in Action is challenging adults to join its Healthy Brown Bag Challenge this month, which happens to be National Nutrition Month.

The group, made up of 50 local organizations and individuals, is working to ensure affordable access to healthful foods and physical exercise. From March 26 to March 30, they will be encouraging adults to pack a healthy lunch for one week. They'll provide healthy brown bag lunch ideas, recipes, a shopping list and more. To be part of the free challenge, sign up by March 19 at Advocates for Health in Action's website.

More than 60 percent of adults in Wake County are overweight or obese, according to the group. Not only does packing lunch save money, but it also can mean more healthful meals.

The group shared one of the recipes with me, a roast beef and blue cheese wrap originally from Cooking Light magazine, with just 241 calories and seven grams of fat per serving.
Roast Beef and Blue Cheese Wraps
3/4 cup (3 ounces) crumbled blue cheese
2 tablespoons prepared horseradish
2 tablespoons low-fat mayonnaise
1/2 teaspoon freshly ground black pepper, divided
2 tablespoons sherry vinegar
1 tablespoon honey
1 garlic clove, minced
2 cups thinly sliced red cabbage
1/4 cup thinly sliced celery
1/4 cup thinly sliced fresh basil
3 (10-inch) flour tortillas

1/2 pound thinly sliced deli roast beef


Combine blue cheese, horseradish, mayonnaise, and 1/4 teaspoon pepper. Combine 1 tablespoon cheese mixture, vinegar, honey, and garlic in a medium bowl. Add 1/4 teaspoon pepper, cabbage, celery, and basil.

Warm tortillas according to package directions. Spread remaining cheese mixture evenly over tortillas. Divide beef and cabbage mixture evenly among tortillas; roll up. Cut each rolled tortilla in half crosswise. Makes six servings.
