Tip: These tender bite-size pieces of meat and veggies make great finger food for little eaters but you may want to leave off the red chili pepper flakes for the little ones.

One Pot Asparagus & Sweet Potato Chicken

Serves: 4

Ingredients:

1 lb boneless chicken breasts, cut into 1” pieces
1 tablespoon olive oil
Salt & pepper to taste
1 ½ teaspoons minced garlic
1 medium sweet potato, peeled and cut into 1” pieces
½ cup chicken broth or water
½ fresh asparagus, cut into 1” pieces
½ teaspoon salt
½ teaspoon pepper

Red chili pepper flakes (optional)

In a bowl, season cut chicken with salt and pepper. Heat a medium-sized pan on medium-high temperature. Add olive oil, garlic and chicken. Saute 7-10 min or until chicken is cooked through. Set chicken aside. In the same pan, add sweet potato and chicken broth/water. Cook 7-10 minutes or until sweet potato is tender. Add asparagus and cook 3 minutes. Add chicken and cook additional 2-3 minutes. Season, to taste, with salt, pepper and red chili pepper flakes.
