Recipe: Maple View Farm ice cream pie

This is the best ice cream pie you've ever eaten.

DURHAM, N.C. — It’s amazing what you can accomplish with some  Maple View Farm Ice Cream and a little peanut butter and caramel. We got this recipe from Maple View Farm Ice Cream’s Farmer Bob and Allison Nichols. And trust us, it may be cold outside. But it’s never too cold for Maple View Farm Ice Cream.
What you need:
  • 4 cups cornflakes cereal
  • ½ cup peanut butter
  • ½ cup light corn syrup
  • 1 half gallon
  • Maple View Farm Vanilla Ice Cream
  • ¼ cup chopped peanuts
  • 2 Tbsp. sugar
  • 1 cup Maple View Farm heavy whipping cream
  • ½ cup chocolate syrup
  • ½ cup caramel

Lightly grease a 9-inch pie pan. In a large bowl, mix together cereal, peanut butter and corn syrup. Press mixture into greased pie pan. Spread softened ice cream evenly into crust. Top with chopped peanuts. Freeze until firm, at least 4 hours. To make the whipped cream, place a metal mixing bowl and metal whisk into the freezer for 10 to 15 minutes. Place the sugar into the mixing bowl and add the whipping cream. Whisk just until the cream reaches stiff peaks. Top the pie with homemade whipped cream. Drizzle with chocolate syrup and caramel.
