Summer Pesto Pasta Salad
2 cups fresh basil leaves
1/3 cup good olive oil
1 tablespoon pine nuts
1/4 cup Parmesan cheese
Salt and pepper to taste
1 pint cherry tomatoes sliced in half
1 fresh mozzarella cheese ball
12 oz corkscrew shaped pasta, or any other favorite small noodle cooked according to package directions
To make the pesto:
In a food processor or blender, combine the olive oil, salt, pepper, Parmesan cheese, pine nuts, and basil leaves. Turn on machine and combine ingredients until it forms pesto sauce.
To assemble pasta salad:
Place cooked, rinsed noodles in a large bowl. Slice fresh mozzarella into small cubes. Add homemade pesto, cherry tomatoes and mozzarella cubes.
Mix well and refrigerate for at least one hour before serving. Mix well, once more, before serving.
