When I am cooking for my family of five and come across a recipe that uses a single pan, I know it’s a keeper! This one-pot meal from FIT4MOM’s Body Back Nutrition Guide and Recipe book is quick to prepare, makes for easy clean up and can easily be doubled. Plus everyone tops their bowl with a different combination of delicious toppings so it’s a single meal that appeals to all of our unique palettes.

Fiesta Turkey Skillet

(serves 4)

Ingredients:

1 lb ground turkey
14 oz whole wheat pasta of your choice
2 1/2 cups hot water
1 can black beans, rinsed and drained
1 can corn, rinsed and drained
16 oz jar salsa
1 tsp ground cumin

1 oz shredded cheddar cheese

Directions:

Cook turkey in a large nonstick skillet until cooked through. Add pasta, water, salsa and cumin to the skillet and bring to a boil. Reduce heat, cover and simmer for 10 minutes. Stir beans and corn into the skillet and heat thoroughly. Top with shredded cheese. Additional toppings could include sour cream (or plain whole milk yogurt), green onions, jalapeños, avocado slices, black olives or whatever your family likes!
