Recipe: Honey balsamic chicken

Keeping the family fed with healthy foods is a full time job! I find that a little prep goes a long way in taking the stress out of making healthy meals happen. Serve this recipe from FIT4MOM’s Body Back Nutrition Guide and Recipe book with a big serving of your favorite steamed veggies and a 1/4 cup of cooked quinoa, rice or cauliflower rice for a colorful, filling and healthy meal that the whole family will love.

Honey Balsamic Chicken

(serves 2-4)

1 lb chicken breasts or thighs, skinless & boneless
1 gallon-size zip-top bag
1/4 cup balsamic vinegar
1/4 cup olive oil
1/4 cup honey
1/2 tsp dried thyme

1/2 tsp dried rosemary

Place chicken in zip-top bag. In small bowl, whisk together remaining ingredients. Pour into zip-top bag with chicken, squeeze air from bag and seal. Shake or massage bag to coat well. Refrigerate 2 hours or overnight. Grill over medium heat for four to five minutes per side or bake at 375 degrees for 30 min or until cooked through.
