Grilled & Filled Avocado
Makes 6 Servings
*Half of an avocado can be a side dish or you can have a whole filled avocado as the meal with an additional side
INGREDIENTS
- 3 avocados
- 3 limes, cut in wedges
- 1 cup grape tomatoes
- 1/2 cup corn, fresh or frozen
- 1/2 cup onion, diced
- 1/2 cup of black beans
- 1/2 cup pineapple, fresh or canned in juice
- 3 serrano or jalapeno peppers
- 2 garlic cloves
- 1/4 cup cilantro leaves, chopped
- 1 tablespoon oil of your choice
- Salt & pepper to taste
DIRECTIONS
Set the oven to the roast setting at 550 degrees and start your grill.
Add tomatoes, garlic, corn, onions, pineapple, beans, 1 TBSP of oil, salt and pepper to a bowl and mix well.
Line a baking sheet with parchment paper & add the vegetable mixture.
Roast until lightly browned (about 10 minutes), turning once or twice.
Slice the avocados in half lengthwise & brush with a little oil.
Place the avocados, flesh side down on the grill. Grill until slightly charred. (Don’t want to grill? Roast the avocados in the oven with the other vegetables!)
Remove the avocados and fill the center with the roasted mixture.
Top with chopped cilantro, sliced peppers, and lime juice.
