For those mornings - or long summer afternoons - where you need something a little sweet, try these easy-to-make muffins.

Coconut chocolate chip muffins

Coconut Chocolate Chip Muffins

2 cups all purpose flour
1 cup sugar
1 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup milk
1/4 cup vegetable oil
1 large egg
2 teaspoon vanilla extract
1 cup shredded coconut

1/4 cup mini chocolate chips

Preheat oven to 375 degrees.

In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. In a smaller bowl, combine the milk, oil, egg and vanilla and mix well. Pour the wet ingredients into the dry ingredients and combine. Stir in the coconut and chocolate chips.

In a muffin tin lined with 12 muffin cups, spoon in the batter. Top with another teaspoon or so of coconut. Bake for about 20 minutes. If the muffins start getting too dark on top, lay some foil over them. They're done when a toothpick stuck in the center of a muffin comes out clean.

These are really delicious with some raspberry jam.
