Recipe: Chicken sausage with peppers & onions

At the Raleigh Home Show this weekend, I taught a Meal Planning class including making a frugal easy weeknight dinner: Chicken Sausage with Peppers and Onions.

I also made it again Sunday evening at home and served it for dinner with sides of salad, avocado slices, roasted carrots and wheat toast with olive hummus.

At the Home Show, I used the NeverAny! Mild Italian Sausage and at home we tried the NeverAny! Spinach and Feta Chicken Sausage. Both were delicious!

Below is the recipe. My thanks to Aldi for sponsoring the cooking class and providing the food.

1 package fully cooked chicken sausage, 12 oz. (4 sausages), sliced

3 multi-color peppers, sliced

1 medium onion, sliced

Olive oil (approximately 1 - 2 tbsp)

Minced garlic (approximately 2 tsp)

Garlic powder to taste

Pepper to taste

Directions

Put 1 - 2 tbsp olive oil in pan on medium. Add minced garlic. cook for about 2 minutes on medium. Add sliced onions and peppers. Cook for about 10 minutes until preferred level of tenderness. Add chicken sausage, as well as pepper and garlic powder to taste. Cook until heated through. Serves 4.

This dish is great served over brown rice with a side salad. It's also very good served with some chopped avocado on top.
